Mandarin Gummies

With a terrible flu season currently taking over in the East making the kids some natural gummies are great for immunity thanks to the healthy gut properties of gelatin.  Eastern Suburbs Mums buys their gelatin from local health store Coco’s Wealth of Health in Maroubra Junction and our gummies’ molds are from Ikea.  The kids love making them and they are a good option to sweets !

MANDARIN GUMMIES

Ingredients:

1 cup freshly squeezed mandarin juice – we used Delite Mandarins from Woolworths as Australian grown and seedless so the kids like them and easy to peel!

3 tablespoons honey

¼ cup gelatin

Steps:

1. In a small saucepan bring the juice and honey to a low simmer.

2. Add the gelatin and whisk together. Turn the heat on low, and continue to whisk the mixture for 5-10 minutes, until everything is incorporated. Take off the heat.

3. Pour into silicone molds or a small baking dish. Set in the refrigerator for at least 1 hour to firm up.

4. If you used a small baking dish as a receptacle, cut into bite-size squares. Otherwise, remove gummies from their molds and enjoy!
