OUR STORY
Welcome to Bondi Liquor Co, the first operating distillery based in the heart of Bondi Beach. All our products are distilled onsite making us truly “Bondi Original”.
Born out of a love of the liquor industry, 3 mates Ben, Adrian and Will have brought together years of experience from across hospitality, distribution and alcohol production to form our vision of what Bondi means to us. Our products are simple and clean and where possible we use organic and Australian grown botanicals. Sometimes that is not possible, so whilst we maintain the utmost in social responsibility, we will always put flavour and quality above all else.
Our ethos is to enjoy life, and whilst we are advocates of responsible drinking, we love the friendships and conversations that happen where a glass or two is being enjoyed. Another gin?
OUR STILL
Our copper still “May” forms the centrepiece of our distillery. Named as both a nod to the fact we finally agreed in May 2020 to embark on this adventure, and also as a homage to the late Mrs May Loftus a Bondi local, who was the first woman to achieve the Bronze Medallion in 1904 which is the prerequisite for becoming a beach lifesaver.
Australian made and manufactured by HHH Distill in Perth by Hilton a retired engineer with a passion for creating copper stills, May has a 200L capacity with 2 separate vapour baskets and a rectifying column to give us maximum control and flexibility in creating and developing a wide range of gins and vodkas, and many other spirits in the future.
OUR VENUE
We welcome you to come in with sand between your toes after a day at the beach, or dress up a little bit and feel like you are somewhere special. Whites and blues and soft wood colours will make you feel like you are definitely in Bondi. Choose between outside tables, inside stools and benches or take a more relaxed pose on the couches in our distillery lounge room. Upstairs is more chic with stained black floors to create a bit more of a formal feel.
OUR MENU
Designed to complement our products and to foster that fun social environment we all enjoy, our menu is designed for sharing with lots of smaller options and share plates. Based on a Mediterranean fresh style, there is something for everyone to enjoy.
We offer Gin Tasting Paddles so you can enjoy and compare our products, and offer a range of other beers and wines to add to your experience.
FUNCTIONS
We offer a dedicated function space in our upstairs lounge that can accommodate groups of up to 35 people, whether that be for a celebration or work function, please get in touch and we can work out what will best suit. A dedicated bar and multiple catering options are available.
